Recipe - Spice Up Your Day With A Tart Back

Let’s create this vegetarian tart recipe with the unique combination of broad beans and roasted red pepper. Broad beans are a member of the legume family, and are pretty hardy and adaptable - they grow in most soils and climates. They're a great source of protein and carbohydrates, as well as vitamins A, B1 and B2. In America, it is usually called as Fava beans. Use broad beans to make this delicious tart that is both tasty and healthy.

Broad bean and roasted pepper tart

Ingredients:

  • Self-rising flour, plus extra for dusting- 200g
  • Low fat Spread- 100g
  • 3 medium eggs
  • Reduced-fat crème fraîche - 200ml
  • Vegetarian Parmesan, finely grated- 40g
  • Handful fresh thyme leaves, plus extra sprigs to garnish
  • Freshly podded broad beans- 250g
  • Roasted red peppers in oil, drained and roughly chopped- 280g jar

Preparation:

Mix together the flour in a bowl and the low fat spread. Keep mixing till the mixture looks like fine breadcrumbs. Add 2 tablespoons cold water and work the mixture into a ball. Wrap in cling film and chill for 30 minutes.

On a lightly floured surface, roll out the pastry and use to line a 23cm round x 3cm deep loose-bottomed, fluted tart tin. Prick the base several times with a fork and pop in the freezer for 10 minutes.

Meanwhile, preheat the oven to 200°C. Then, line the pastry with baking paper and baking beans and blind-bake for 10 minutes. Remove the paper and beans and bake for a further 5 minutes or until the pastry is dry and pale golden.

Next, beat together the eggs, crème Fraîche and Parmesan in a large bowl. Stir in the thyme, broad beans and red peppers and season with plenty of black pepper. Pour into the pastry case and bake for 25-30 minutes or until the filling is just set and pale golden. Cool in the tin for 10 minutes, and then put on a serving plate.

Garnish with thyme sprigs, slice and compliment it with a salad, if you wish.
